THE CARILIUS FACE

Raffaella Cimadomo is the mind, soul and heart of Carilius wines. She has always been passionate about wine and has been adopted by the Valpolicella territory, where she has made of her passion not only a job but a real lifestyle. Raffaella wants to bring into the world an excellent wine, capable of combining tradition and contemporaneity and or communicating through a simple, young and new language. Raffaella’s artistic, dynamic and romantic soul result in a modern, clean and impressive label carrying the name Carilius, that named the town of San Pietro in Cariano, to which she wanted to pay homage.

The hand written black and white logo is deliberately stripped of any overstructure and the hashtag, at the end, forcefully states the contemporary nature of a wine that is feminine and elegant, both inside and outside.

THE TERRITORY AND ITS WINES

The Carilius Italian wines are born in the historical wine area of Valpolicella: the extraordinary vineyards of Corvina Veronese, Corvinone and Rondinella master the Valpolicella hills where the precious grapes are characterized by great adaptability and vigour, that give their best results on poor soils of alluvial origin of clayey and calcareous composition that grant our wines the typical elegant and intense red colour, but also the typical aftertastes of cherry and jam.

OUR WINES

The Carilius wines range - including Valpolicella Classico, Valpolicella Classico Superiore, Valpolicella Ripasso, Amarone della Valpolicella and Corvina - is enriched by a single white wine, the Soave DOC.

Re-passed on the intense and fragrant Amarone refuses, this wine releases the force and strength of the autochthonous dried grapes.

Vinification: The hand-harvested grapes are macerated and fermented in the same month for about 10 days and then left to rest in cement or steel tanks until January/February when the wine, following the ancient technique of Ripasso, is fermented again on the refuses of Amarone, in order to aquire more complexity
Ripening: Barrels of Rovere of Slavonia 50 hl for 12 months
Refining: 6 months in bottles
Colour: Intense ruby red
Scent: Intense, complex, with fruity notes of ripe cherry. Light sweet spiciness and pleasant toasted notes
Flavour: Warm and soft while maintaining a good freshness. Intense and long persistence

Pairing: Ideal for main dishes of meat, medium-mature dishes and traditional dishes of Verona

Vinification: The hand-harvested grapes are withered in fruttaio for approximately 20/25 days. Follows the fermentation with daily plunging (breaking of the cap of fruit refuses) for about 10 days.
Ripening: Barrels of Rovere of Slavonia 50hl for 12-14 months.
Refining: 6 months in bottles
Colour: Ruby red of good intensity
Scent: Intense, good complexity and notes of ripe prune and black pepper.
Flavour: Warm, in good harmony with between softness and freshness. Balanced tannins, good intensity and persistence.
Alcoholic degree: 14% vol.
Pairing: Ideal with meat, roasts and medium-mature cheese. Excellent with the traditional “risotto al tastasal”

VALPOLICELLA CLASSICO
Born in the heart of Valpolicella classica, Nato nel cuore della Valpolicella Classica, suited to every moment and occasion of discovery of scents and flavours of our territory.

Vinification: The hand-harvested grapes are immediatley pressed and subjected to maceration for almost 10 days, fermentation and racking. In November is added 15% to the Valpolicella wine for a second slow maceration and fermentation for about 20-25 days
Ripening: Dry, quite soft and good freshness. Keeps on the palate the pleasant fruity notes peceived by the nose with intensity and persistence
Alcoholic degree: 13% vol.
Pairing: Ideal wine for to piar with the traditional veronese dishes, from the sandwiches with “soppressa veneta” to the “bollito misto con pearà”

Vinificazione: The grapes are hand-harvested and subject to a slow cold maceration in order to extract the varietal aromas of Garganega. The fermentation takes place after the decantation of the must at a temperature of 15-16 °C

Colour: Straw-yellow with greenish reflections Scent: Intense and elegant, prevail the scented notes of white flowers of jasmine and the weet notes of apricot and apple. Unmistakable mineral note of silex and graphite typical of the volcanic soil

Climate: Long and not too dry summer. Rainy winters with mild temperatures.
Grapes harvest: Beginning of September
Vinification: Rosè vinification, with separated variaty and short maceration for 24-36 hours at 8°-10°C. First fermentation occurs inside steel vats at controlled temperature, where selected yeasts are added. The wine becomes bubbly inside low-temperature pressure tanks.
Colour: Shade rose reminding the colour of peach blossom and rose.
Scent: Intense, fruity complex and reminding the scent of flowers and small fruit of ripe passion fruit.
Flavour: Pleasantly acidity and fresh flavour. Full-bodied with a harmonious taste.
Alcoholic degree: 11,5% vol.
Pairing: Excelent as aperitif and served with fried vegetables, sea food salad and fish courses in general.

LA BOTEGA

The Botega di Carilius was born from Raffaella's desire to build a place that would express the essence of her label, Carilius Wine, combined with the magnificence of the Valpolicella territory, a small corner set in stone. Every single wall of the Botega is the result of work done with passion, the stone protruding from the walls has been freed, by hand, to give life to a characteristic environment: a material expression of the values of simplicity and hospitality. Inside, it will be possible to do tasting activities, as well as simple aperitifs, a community place in which to meet and experience the beauty of the area.

If the Carilius wines, with their unique lable, perfectly express the bold, contemporary and artistic soul of Raffaella, however, is the extraordinary frame of the B&B Relais de Charme La Caminella, an ancient tobacco drying barn, to reveal her romantic and familiar soul.
